sprocket/gear ratio?

Well, the Norto-Moto project is underway... settled on front-end and wheels... A Kawasaki dual sport front-end and wheels... The sprocket on the wheel is a 51-tooth, too big for this application. I'm going to have to order a sprocket from Sprocket Specialties. I'm also going to order a 525 front sprocket. My question is, since it is going to be a dual-sport Norton (started life as a 74 850 Commando) what would make sense for gearing? Needs to be lower geared for those trips down the dirt roads and trails but still make it's way on the blacktop... Probably won't see Interstates/freeways all that much... And what tooth counts are available in 525 width for the front?
 
You can use all of the production range of gearbox drive sprockets from 19T to 24T. 19 will give you extreme acceleration and top out at around 100MPH. The standard sprockets can be machined down to the size of chain you wish to run. I believe Colorado Norton Works has a range of these as off the shelf parts.
