So my dad found half a dozen old work receipts for the bike and on one was a note that it should be running #4 slides because of the dunstall pipes. I know it's running 3.5's but can anyone shine some light on that?

Panic has a fine book on tuning Amals. If you think you know all the tricks buy one and learn. Slide cut aways are only one of the tweaks.
