What length for a stock set up US bars and who has a nice quality line. The rubber I have on both mine now look bunched up or too long

Apparently the most common off the shelf length, especially with the stand off tube. I just got away w/o stand off tube using tall T140 bars which stretched SS hose to about straight but soon as I was on bike it sagged for plenty of slack to worry about it rubbing stuff so had to zip tie split clear tube here and there.
Can't give numbers as too much snow to trudge to shed. Vendors can fill in that.

I went to Vintage brake in California on a recommendation from my vintage racing friend's. I thought I'd give him a try. After all, he builds brakes for all the top name racers in the country.
My 73' has a 24 inch clear coat stainless line $28, AN-3 fitting 3/8-24 chrome, $5.95 and one AN-3 Bulkhead fitting 3/8-24. $7.95 plus shipping.......
Mike can also sleeve your norton master for a better feel and performance ......

Vintage brake, Sonora, California 209-533-4346 or look him up on the web.

I used the braided, stainless, plastic coated brake line myself; but got mine from drag speciaties. (available on ebay also, of course, sometimes really cheap too.) I also changed my master cylinder to a nissin ($69.00) available from "mikesxs" or "northerneagle" ... works fantastic, much better than the "sleeved" stock ones I've tried even. :D
