What you say indicates (maybe) you have an idle set but the pilot circuit (air screw) is not set correctly. It takes 2 or 3 rotations of setting idle screw then air screw then idle screw.... etc to get the carbs dialled in so the idle (pilot) circuit gives a nice crisp response. If it then acts up off idle with a twist of the wrist adjust needle. Also of course you have to make sure idle circuit is clean and unobstructed, bain of Amal’s!Been trying to solve a high idle. Slides not hanging, fully closing. I can dial out with mixture screws to around 900 or 1000 ok. But note when blipping throttle it takes a second or so to drop back down to previous rpm. Sometimes I find it creeping up to 11-1200 rpm when sitting at a light. Can't detect leaks at flanges.

I had the same behaviour with idle being unstable, as you have.
The source to that was the ignition advance unit.
On my unit I was able to adjust the tension on the springs to stabilize the idle.

Uncertain bike had only 7500 on clock when I got it two yrs ago. But only one carb fitted while other was in box. Did about 3500 on the single last year. Now running both carbs and have swapped in hardened anodized slides.What's the mileage ? Usually shot around 10,000. Higher mileages risk fracture of the slide(s) getting slurped into the motor and hopefully spit out the exhaust. Why risk it , start saving for upgrade carb(s).
Welp someone must have been buying the two into one mani's and single port ham can front plates sold by Norvil/AN/RGM etc which are not directly fittable to Mikuni carbs due to different flange bolt spacing and port sizing.Wow I've never seen someone run a single Amal Concentric on a Norton.
