Can anyone tell me the wrench size of the jet holder in a Amal premier? It can be reached through the bowl drain for attention but not seen without dropping the bowl.

A 5/16 BSF or 1/4 Whitworth spanner is required to undo and remove the jet holder from the bottom of the carburetter body.

8mm socket with 1/4"square works for me.

That's the main jet size (or more likely 2BA spanner size), not the jet holder.
