I found out that using twice as much bacon made them better this time!

One each, please; there has to be enough to go around...

They were SO right.

Nice chunks of brisket; not too dry, not too fatty.
Raw jalapenos, not blanched; very zingy without destroying taste buds.
Decent amount of bacon, crispy and not hard or rubbery.
You can't mess up cream cheese if you don't burn the poppers.

Slice the peppers open and "gut" them

Slice up a block of Philly Cream Cheese... (1/2 block shown)

Place cheese on peppers-

Place a nice lump of brisket on each pepper- (I used 1 LB for 12 peppers) and had a nice couple of bites leftover, plus excess fat trimmed off)

Pre-cook to near-crispy, or buy pre-cooked bacon (I used 3 packs of pre-cooked) DO NOT use "microwave-ready", it's NOT pre-cooked!
Wrap each one, I used 2 slices each and they were REAL nice...

Bake at 350 for about 10-12 minutes (see original photo)

Paul, if I rolled up on my Norton sometime this summer would you make me some? I love anything Tex-Mex! Truthfully, I just love to eat good food and that looks delicious.

That really looks interesting – I love exploring new food ideas and experimenting in the kitchen. It's always exciting to find a recipe that everyone loves and tweaking it to make it even better.

In case you're still hunting for this info, I recently came across this natural foods company where you can get a lot of great stuff for cooking. They have a wide range of natural and organic ingredients that can take your recipes to the next level. It's always fun to try out new ingredients and see how they can enhance your cooking.
Looking forward to hearing how everyone likes the poppers. Anyone got other creative snack ideas or tweaks to classic recipes?
 
I know it's sacrilege, but would banana or bell peppers be a good substitute for us wimps that can't handle hot stuff?

Greg, if I steam the stripped jalapenos before assembling the poppers, my grandkids can eat them; totally harmless.

...and, YES, any pepper can be "popped"

Doing this today for our Monthly Game night..
We'll see.....
 
Now you’ve done it grandpaul - 4th of July weekend here at the Jersey shore. Off season year round population of 10 - 12 k will swell to 250 k or more . EVERY THING will be stressed to the breaking point and you have got me thinking of braving the crowds and going to the store to get the ingredients. Thanks ( I think ) .​
