Pinstripe width

Need the width of the stripes and gap, 74 Roadster tank in black.

I use 3mm stripes with a 3mm gap - close enough to a 1/8" pinstriping brush

Variable if you want the OEM look

Perhaps buy a set of pinstripe/logos stick on "transfers" for the side panels from Classic Transfers - Robert Derrick Ltd

Watch out that you buy the correct side panel transfers for the Roadster side panels.
There are two designs with the pinstripes at different acute angles to suit the side panel shape.
I found out the hard way !

Then copy the pinstripes width/spacing onto the petrol tank ?

Hand pinstriping varies. I have an OEM striped tank that they average about 1/8" wide and the gap is about the same. The locations on the tank are not exact either.
