When you say Nortons do you mean actual Nortons or Molnar Manx's McIntosh Manx's and the like?

Mick Neason actually has a Seeley commando there in the Classic/Post classic unlimited class. And I think Kenny Cummins might be in the Forgotten Era International Challenge . Dave Roper is also there. There is an atlas powered sidecar, and few featherbed Norton twins, and a couple of genuine manxes there somewhere, however I don't know how you can tell which ones.

Easy, if they are Japanese they are probably original bikes, if they are British and last the race they are probably modern replicas.
Bit like the " Its my Grandfathers Axe" story, My grand father fitted a new head and my Father fitted a new handle....

There were about three Norton Altlas engined bikes there - probably all had 750 commando engines.

Were they "Atlas engine", or did they "have Commando 750 engines"?

It's got to be one, or the other.
