Does anyone know of a source for a new Commando headlamp shell with just one wiring hole in the bottom? All the ones I've seen (Norvil and Old Brits) have three holes, and my 74 only has one.

If no direct help here, go to tech notes or down your own list of venders and ask them. They've pulled some rabbits out of hats for me and others joys.
I'm only familiar with 750 headlights and the 4-5 I've handled just have one but hole at angle off bottom both in 5" and 7" OD's. On top they vary with and w/o the amp gauge hole. All had the indicator holes plus switch hole.
 
Boy, I wish I had seen that earlier. I got one from RGM with only the ammeter and the single wiring hole in the bottom. I drilled the holes for the switch and the high beam light myself. It came with the rim so the price wasn't bad, but the threads in the sides were 5/16-24 instead of the 5/16-26 CEI, so I had to make up some SS bolts that looked right. You might talk to them, I went back and forth with them about what they had. Looks like it is an oriental reproduction, the chrome is a bit yellow, but hard to tell on the bike and I don't mind it. It is a bit smaller than the original, but it fits.
