Well.. 73 was a transition year, there were 750's and the new 850 MK1. So, maybe one could say that the 850 was an upgrade option?
Other than color choices I don't think there were any options. It's a shame that Norton never offered luggage racks or panniers for their Interstate.
 
I guess you could say that the options were, Fastback (for a few months in 73), Roadster, Hi-Rider and Interstate!
Most accessory options were provided by the big dealers like Gus Kuhn In the UK, and probably the same with the US dealers.

It’s a point of view thing regarding 750 or 850 which is better. As you can see I’m in the 750 camp.
