Hunting and dying shortly at 3000 rpm

I went for a ride today and experienced what felt like the motor hunting and shortly dying. I thought it may be fuel but the lines were full and I made my way to a petrol station but it still continued. Yesterday I fitted chokes for better cold starting but they also were fully open.
The carbs fitted are new amal premiers which give a very good tickover and this only arose while cruising at around 3000rpm.
 
Hi Woody850, Do you have a Boyer fitted? If so it may be the wires to the pickup stater plate have broken and are making erratic contact.

Has this been happening since installing new carbs or did they work correctly for awhile before this developed? I'm puzzling over the idea of float levels or needle adjustment. But have to be honest that the key word in that sentence is "puzzling". Is it possible the fuel flow rate isn't high enough to sustain high RPM?
 
As discussed in another thread, new Premiers seem to come fitted with #17 pilot jets and many owners are finding these definitely too small. [HASHTAG]#19s[/HASHTAG] seem to be the better choice.

Whether or not this is your problem I don’t know, but if you still have #17 pilot jets fitted, they certainly won’t be helping your low speed running.
 
Ok I checked over your tip cliffa.
Looks like that could have been it, a very badly job did reveal bare wire under oily insulating tape.

The Nortonic Manic grin stayed with me on the ride.

Check that the main jet holders haven't loosed up and are unscrewing;\.
