It doesn't work that way. The muzzle velocity of the projectile would be in addition to the velocity of the object it was fired from. Also, depending on the weapon, Mv can and usually does exceed mach 2 to begin with.Variety of reasons.
At that height a fighter needs to be supersonic to maintain altitude. Depending on when a bullet is fired a jet could very well overtake it.
Difficulty of firing on a stationary object at that speed.
