If the pockets are deep enough, I would do the 69 into a 'S' upswpet pipe model.
And the 74 into a correct Interstate. You would then have 2 of the best, most desireable models.

Is there an easy sure fire way to tell what they were origionally?

Probably not. Can you get us the serial numbers that would help immensely. Do they match with the trans, motor and frame? Look at the 1/2" nylock nut on the left side top of the Z-plate on the '69. Does it have a flat place worn on it? If so, it was probably originally an 'S' model. It's from the exhaust beating on it. It would look like this:

The early one could have been anything from a 'S', 'R', Roadster or even a pre-fastback which I think looked very similar. Does it have the 'ring' headlamp holder? What color is the fiberglass as the base coat? You can probably look under the gas cap or under the rubber holders at the back of the 2 panels if its been repainted. Does the tank have 2 banjo fittings at the bottom?

I'm looking for '69/70 clues here.

Someone else can speak to the 850, not in my experiences.

A follow on from what dave has said, look at your oil tank if it is panier i.e. flat and mounted on the right side then it is early R or fastback,
if it is in the centre and looks like daves- 1970-roadster-references-and-detail-pictures-t5389.html#p50032
then it is a S or possibly a roadster which my referances say was not released untill 1970, but somebody may correct me.
