Does anyone know a UK supplier for these connectors in the headlamp of my MKIII 850?

You can get them from MES (their website appears to be down at the moment)

why not just use a modern waterproof connector?

Unfortunately, the 850 Mk3 harness connectors are not the same as those sold by VWP.
