I would only sell one to get another-that black and blue is not a bad idea

He's probably looking at build date on the plate which could have been 1972 for the 73 model year.

Although we have since been advised this is a 1974 model (!), just for the record, the 850 was announced in early 1973 - so there were no 1972 plated 850s.

Clearly, the color that enhances one's Zen reality is the correct one. For me it is/was
Norton Silver.
 
A car restorer I knew always called it Resale Red. I think that Norton metal flake purple is the best color of all, but wrong for your model.
 
If you are after originality make sure you get the stripes correct of an 850,they have twin stripes,750's have single. Lining I think should be silver on the blue, gold on the black.
750's have no stripe except for black (gold "D" stripe). Lettering on blue 750 is gold trimmed in black with gold lettered seat, and silver lining and lettering on blue 850's
 
Black ones have the best looking owners ... anyone care to guess what color mine is ?;)

Was that a three coat mix? Red Metallic base, translucent red (candy) mid-coat, and clear?

Metallics are 2 part - base/clear. My candy apple red was 3 part, silver metallic ground coat, translucent red and clear.

Silver, clear with 'flake mixed in and then wetsanding and more clear.
