i wasn't to fond of that seat as the height was a bit tall (same as a stock interstate seat) so with clubman bars your azzz is a bit in the air, but maybe you'll find that setup perfect for you

Thats the interstate seat I have for my Featherbed 850, Burtons British Bikes in England sell them for 135 pounds as well as RGM and many other British bike shops.

I see what you mean. Seat height would be a bit high with low-slung bars. Plus, I can sit flat footed at a stop but wouldn't mind a drop in seat height How about the other seat? Is that over the counter?

No thats a interstate seat cut down a few inches with a custom cover- i have one with a roadster seat w/ pan front cut back a few inches too (don't have a pic here now) which I think is a better fit because your thighs are tighter on the bike frame and your legs will have less fatigue on longer rides

if you have any auto upholstery shops near you can give them a call - you'd be surprised how many have experience with bike seats - you can pull the cover off and mark the foam with a felt pin for rough cut/dimensions for them to follow + sitting on it will let you determine where to put the ass-stop - i always leave it 2-4 inches behind where i normally sit so i can stretch out a bit if needed on longer rides

most people who set their bikes up for cafe don't really think too ergonomically about it - at least at first - until they walk around like quasi-moto looking for a bell to ring after a few hr drive - i'd take your seat off and sit on a few inch piece of foam to get a height you'll be happy with, go from there -you'll be surprised how an inch or to will make a big difference

Clubman seat and Tommaselli adjustable clip ons.
Kind of a Manx feeling, no?
 
Looks like the old Manx seats, looks great on your interstate.
