What tap & die set do I need

What tap and die set would I need to purchase for a 1970-73 Norton commando. This would be for the cylinder head, cylinder barrel and engine case threads. This also would be to clean up the threads on the nuts and bolts.
 
For that, you would need four or five different sets (UNF, UNC, BSF, BSC, BSW) and that's not including the (metric) spark plug thread so you might find it more economical to buy some taps and dies individually.
 
I have a good collection of taps and dies of diffrent threads, I also have a set of thread files which I find works better than the tap and dies in most places, I have used them to clean out my exhaust port threads as well on a few bikes I have rebuilt, they have saved a many of threads over the years.

Picked up a whitworth/BSF set for $50 on fleabay, not difficult to find

Watch that there won't be too many Whitworth nor BSF in a Commando engine though,
most of them will be 26 tpi cycle thread and some UNF.....

And most of the chassis/cycle parts are UNF = american threads.
With a small list of notable exceptions.

A thread gauge is your best friend here, before doing anything rash - and irreversible.
