Bearing question: SKF use N, NU, and NJ for their roller bearings. Seems to me that it tells whether the rollers are
captive to the outer race or the inner race? Does it matter for the crank?

The original rollers including the RHP Superblend were NF so I suppose NF bearings could be used.

In general, for crankshafts, the type you use will depend on whether you need to accommodate axial movement. If your crankshaft needs to float axially or handle thermal expansion, the N or NU types are better. If you need to restrict axial movement, the NJ type might be more appropriate. Always consider the crankshaft's design and load-bearing requirements when selecting the bearing type.
