I don't think you are guessing much if the stock spec for 36mm MkII Amals for an 850 is 300 mains. Your big mo could run with the 270s, but I am remembering what happened when I tried a popular jetting tune I got on this site for the 35mm FCRs when I first bought them. Talk about a total lean fail. Sudco got it right as it turned out.

I wish I had a dyno in a broom closet like you do. I am strictly a DIY seat of the pants tuner and have been for decades, but have a good feel for it.

Everything I say is sketchy, and I'm aware of it.
