I have the same issue with my neck as I have 2 damaged vertebrae
I have to have a fly screen on my bike
And I can ride at 85 -90mph but more and more cameras , average speed cameras and unmarked police cars are putting the anchors on that

Twin Amals when tuned properly (finally) offer great stock performance. Especially for a 50 year old motorcycle. Holding 80 mph is not difficult nor taxing, on the bike I mean.
Cameras and cops certainly can be.
At one time I was really adept at losing any police "presence" believing they could pull me over. These days, if I get busted I just stop and play their game.

The other influence, for me at least is traffic.
Too many ignoroids behind the wheel.
So much more of my ride time these days is accumulated the first couple of hours of sunrise, weekend evenings and holidays.
I also have preferred highways to use for the times when I want to haul around at higher speeds. In my state traffic cameras/monitors are no longer legal as a tool to issue traffic citations.

I have a single TM 40 mikuni on my commando
It'll pass 100mph without too much fuss

Baz, if I recall correctly, your single carb uses a shopbuilt manifold? The Sudco manifold is purported to be the limiting factor with the single Mikuni conversion.

No I made my own manifold
I couldn't find one big enough
 
I like Shed built. For awhile there were Vincent parts available from Bias Engineering. We all thought that the word Bias was being used to mean angle as in " cut on the bias".
It turned out that Bias simply stood for " Built in a shed" :)

That first video reminds me of the main roads where I live. Pot holes, seal coming off the surface and generally bloody rough. I doubt that guy was doing 40 mph max through that village and cruising at 70 [ neither bike did more ] is what I do most of the time.
 
I don't recall the roads being all that bad in the UK but that was in 2007. I was so excited to be there and be riding an old British bike that I might not have noticed.
I do recall that the IOM course was very rough, especially the Sulby Straight. That bottomed the suspension front and rear but the old bike was at its top speed of around 115 mph.
For the month of touring I started out going pretty fast and using the whole lane on corners. My passenger wasnt happy but didnt complain. On the second day somewhere in the Dales, on a corner, we nearly collided with an E type Jag coming the other way. He was also having fun and using the whole lane, plus part of our lane!
After that I rode at a more sedate pace and made sure to stay well back from the centre line when cornering.
Truth told, it was more fun and less work once I slowed down. My passenger was happy too.
