aftermarket run/stop switch

I am in the process of acquiring parts for my brembo 13mm master cylinder conversion I purchase through CNW. I purchased CNW's Honda switch gear for the horn, lights, turn signals as well; however, I opted not to buy the matching switch gear for on/off and start. Reason being, my MK3 has had the starter removed completely and I'm somewhat on a budget right now. My question is, what on/off switch or setup would you all recommend? I would like to keep it easily accessible in case of a stuck throttle situation. Any ideas would be greatly appreciated, thanks.

Would it be possible to wire in a single button kill switch to the bike? What would have to be done to get the ignition in the "run" position when the key is switched over, and just have the single kill switch for turning the bike off?
